Teaching in Korea without a Uni degree

If you have a university degree, then yes, you can find a job teaching English in Korea. If you nearly have a degree, then this is still seen as having totally no degree whatsoever, even though you may only be 1 credit short.

Are you able to provide the visa office and employer your actual degree certificate and sealed transcript? If not, then you will come across obstacles.
