Same as in other Asian countries. Apply to the jobs advertised on the job boards and by directly contacting recruiters and schools.

I have found though that it's easier to land in Taiwan and find yourself a teaching job as many CAN speak English in public if asking street directions etc. China on the other hand is absolutely hopeless. I have asked questions in English in Beijing, and 90% of those I asked couldn't even understand the most basic of English questions. So best is to land yourself a job BEFORE you arrive to China.

Expect a telephone interview if you are going thru the process of job seeking before arriving to that country.
